From the PM:

Since there are many ways to approach this, let me try to explain this way: A SQL Architect with knowledge, skills and abilities around enterprise database operations, consolidation, performance, management, failover, monitoring, workload optimization, virtualization and migration of MS SQL databases using industry leading solutions, recommended practices, tools and techniques.  

Next, I would look for mention of these "solutions" to be evident in the combinations of products that can be put together to achieve similar results as PolyServe.  More often than not you see MS SQL Architects plugging together Hyper-V, ESX, other VM technologies, EMC, Hitachi, IBM, NetApp, Storage server, iSCSI Vanilla and other SAN vendors, SCOM, Idera SQL and other SQL monitoring tools bringing the products together to achieve a similar Enterprise DB solution.   There is a long list of other DB related skills that should be included like T-SQL, O-SQL, PowerShell and a few others. 

So these indicators, if present might mean that your candidate will have the right stuff.
